Yellowfin Tuna with Mango Salsa and Saffron rice
I made the yummiest tuna last night. Marinade:
- 1/4 cup soy sauce
- 3 tbsp rice wine vinegar
- 2 tsp Dijon mustard
- 1 in finely grated ginger
Mango Salsa:
- 1 mango - peeled and diced
- 4 stalks green onion diced - reserve half for rice
- 1 medium shallot - minced - reserve half for rice
- 1 roma tomato - diced - reserve half for rice
- 1 yellow chili pepper - seeded and minced - used instead of jalapeno
- 2 inches finely grated ginger
- Juice from 1/2 a lemon
- Splash rice wine vinegar
Rice
- 2 cups uncooked long-grain rice
- 3/4 teaspoon crushed saffron threads
- 4 tablespoons butter
- 6 whole cardamom seeds
- 4 whole cloves
- 3 cinnamon sticks
- 1 onion, chopped
- 3 cups boiling vegetable broth
- 1 teaspoon salt
2 6oz tuna steaks baby carrots snap peas
Start with the rice since it takes the longest. (You can use the recipe but i usually end up with the tube package from the supermarket, it’s done in 20 minutes)
Cover rice with cold water and set aside to soak for 30 minutes. Soak saffron threads in 2 tablespoons boiling water. Melt butter in a large saucepan over medium heat; add cardamom, cloves and cinnamon and fry 2 minutes, stirring occasionally. Stir in onion and saute, stirring occasionally, until golden brown. Stir in the rice, reduce heat to low and simmer for 5 minutes, stirring constantly. Pour in the boiling broth and stir in the salt and saffron. Cover and cook until rice is cooked and all liquid is absorbed, about 40 minutes.Next up the marinade. You want the tuna to marinate for about 30 minutes. Place the tuna in a shallow dish. Mix marinade ingredients together. Flip every 5 min.
Mango Salsa Mix all ingredients together in a bowl and allow to sit.
About 10 minutes before the rice is done, heat a pan for the tuna, and a steamer pot for the veggies (or you can cheat like I do and get the steam in the bag microwave veggies). Once the tuna goes in, toss the veggies in your steamer (or microwave). Cook the tuna until it’s barely pink on the inside and the outside is nicely brown (this is helped by the sugars in the soy sauce and vinegar)
Mix the green onion, and tomato into the rice and serve. To make that restaurant look, mound the rice in the center of the dish and place a tuna steak on top. Place veggies around the base and add a few spoons of the salsa on top.

I hate stores that have chromosomal issues. Just because I don’t have dangly bits, doesn’t mean there isn’t green paper in my wallet.
I have a 1911 and after next Saturday, my paperwork will be in for my CCW permit.
So I’ve been thinking about adding a 9mm to the collection. Don’t get me wrong. I LOVE my 1911. But, I also love wearing retro style t-shirts and the .45 will stick out like a sore thumb. Not to mention the cost per box of .45 ammo.
Since we were up camping in Prescott this weekend, we thought we’d stop by J&G Gun Sales. Not to necessarily buy a gun, but Haltse was after some .45 magazines and a .22 conversion kit for the .45. I happened to notice one of these. Actually they had some from the 39, 59 and 69 model lines.
Of course I hadn’t seen one of them before so I want to see how it fits. (I have a hard time finding guns that fit comfortably in my hand.) So I wait. And wait. And wait. I’m told that someone will be with me in a moment. And I wait some more. As people leave, so do the sales people.
Once everyone has been helped, I’m still waiting. A guy comes in from outside and is helped immediately.
Finely a large bald guy comes over and asks if I need assistance. He’s obviously annoyed to begin with. I explain that I already have a large carry gun and I’m looking for a smaller 9mm without a composite body. I state that I notice that they have several different model numbers on the same basic build and if he can tell me the difference between them, if one is better than the other.
The answer was less than heartening. Grip changes, sites. “That’s all that’s different?” I ask. I know a tiny bit about how S&W changes their models. The last 2 numbers would change from small things like sights and finishes. The first two usually signify a major change.
I ask to see the 6904(blued finish) they had with the ambi-dexterous safety. This is on the middle shelf and on the end. He goes for one of the 6906’s(stainless finish) they had. I keep saying no, on the middle shelf. He finally grabs the right one. Oh, I thought you were looking at one of the silver ones.
Silver ones.

This isn’t the first time it’s happened either. Every time I’ve either been at their shop, or gone to their booth at the gun show, it’s the same thing. Penis’ first. Boobs second. If I stand behind Hal and he gets their attention first, then there are no issues, but Spaghetti Monster help me if I’m up there by myself.
To bad more than half my guns came from them. my makarov(my first hand gun), my sks and my mosin m91 are all from JG. Haltse didn’t buy his .22 conversion because of it and we probably won’t be stopping in their store or at their gun show stand again.

I was wondering why the world was a little less funny this morning.
I don’t believe in an afterlife, but the idea of him giggling his ass off at the world going to shit makes me feel all warm and fuzzy.
Can I finally lose some weight?
Let’s be frank for a moment. I’m fat.
Sitting on my ass for 3 months recovering from a motorcycle accident, drinking starbucks every morning and eating fast food because I couldn’t stand up long enough to cook (lame excuse) did not helped my waistline.
I’m finally doing it properly. I start my weight-loss plan at Core next Friday. Their system uses a dietitian along with finding your base metabolism level and a personal trainer.
To make things more fun, when you start the program, you roll a dice and after 90 days, however many ‘fat-pounds’ you have lost, they multiply it against your dice roll and cut you a check. Goody me. I rolled a 6 so I’m shooting for 50lbs. That would pay for a wii, right?
Zenni Optical - Finally decent affordable glasses.
There is only one thing I hate worse than being bilked $200 for good glasses. And that’s losing said glasses.
That’s where Zenni Optical comes in. I was turned onto this place by a co-worker, and placed an order for these in silver. I went with the memory titanium because, well, Dobie’s first response when grabbing my glasses is to pull them horizontally. They are nicely flexable and should handle his abuse.
With shipping, they came to just over $25. I know this is no excuse for not keeping better track of my specs. But at least it’s not a massive chunk out of my wallet.
Oh and they do prescription goggles as well. I’ll be picking up a set for use on my bike and the range.
